Trucker Prepares Vegan Meals on the Road, Sheds 65 Pounds

Bobby Anderson is a typical Mississippi long haul trucker, spending an average of 14 hours a day on the road, six days a week. After getting fed up with the toll his grueling schedule was taking on his physique, Anderson adopted a vegan diet and was able to shed an impressive 65 pounds while on the road.

“I used to want to look like Arnold Schwarzenegger. And I ended up looking like Chris Farley,” said Anderson.

Anderson was none too surprised, given his somewhat sedentary lifestyle as a truck driver and the fact that most truck stops are filled with fatty, fried, and generally unhealthy foods. Despite these obstacles, Anderson was firm in his decision to commit to healthy lifestyle while spending countless hours on the road.

The secret to Anderson’s weight loss is that there was no secret. No games, no gimmicks, no fancy workout equipment or hours at the gym, and definitely no celebrity-sponsored supplements. Anderson simply eliminated junk food and began cooking all of his own meals. However, what really tipped the scales in Anderson’s favor was his decision to forego all animal products from his diet and replace them with nutrient-rich fruits and vegetables such as avocados, potatoes, and blueberries.

Anderson’s weight loss journey is just one of many examples of the health benefits of adopting a vegan diet. Consuming fruits and vegetables at least three or more times a day versus just one or none has linked to a 27% less chance of stroke, 42% less chance of stroke mortality, and 25% lower chance of cardiovascular disease mortality.

For a guy who spends the majority of his time on the road, the transition wasn’t easy. In order to continue adhering to his new diet, Anderson plans his meals on his days off.

“It takes all day to get ready to do this stuff, but it’s well worth it,” said Anderson.

Using his big rig’s electrical power, Anderson brings along his pressure cooker, waffle maker, hot plate, toaster, and even a Nurtribullet to help him prepare meals on the go. Using these appliances, he’s able to cook meals such as vegetable stir-fry with peanut sauce over rice with cauliflower, broccoli, curry, dried parsley and pepper.
